At a recent wind up night, a friend made this Spicy Pumpkin Dip. She received so many positive comments about it that she kindly shared her recipe with a few of us.
SPICY PUMPKIN DIP
- 500g pumpkin, peeled, deseeded and diced
- 2 unpeeled garlic cloves
- 2 tsp cumin seeds
- Olive oil cooking spray
- ½ cup salted cashews
- ¼ cup milk
- 1/3 cup finely chopped coriander
Preheat oven to 220C. Line a baking tray with baking paper. Place pumpkin, garlic cloves and cumin seeds onto prepared tray and spray with olive oil. Sprinkle with salt and pepper. Bake for 20 minutes or until tender, cool.
Squeeze garlic from cloves and place into Thermomix bowl together with cumin seeds, cashews and coriander and process for 5 seconds on Speed 7.
Place pumpkin and milk in bowl and blend for 30 seconds on Speed 4.
Cover and refrigerate until required. Serve with Turkish bread.
