Spiced Almond Apple Pie
Give your mum a treat she’ll adore: an apple pie fresh from the oven. Baked with love and a pinch of spices, this recipe is sure to delight. Makes one pie to serve approx. 12.

Ingredients
1kg whole apples
500g water to steam
1 vanilla pod
1 cinnamon stick
1 whole nutmeg
2 whole cloves
Zest 1 lemon
100g sugar
60g almonds, blanched
430g cake flour
250g butter
2 egg yolks
60-70g iced water

Method
Prepare apples by placing into Varoma dish without peeling or slicing. Place water into mixing bowl and set Varoma into position. Steam for 15 min/Varoma/speed 3. Set aside to cool.
Prepare spice mixture by placing vanilla, cinnamon, nutmeg, cloves, zest and sugar into clean, dry mixing bowl and milling for 10 sec/speed 10. Set aside.
Return 60g of spice mix to mixing bowl. Add almonds and blend for 6 sec/speed 8.
Add flour and butter and mix for 5 sec/speed 6.
Add yolks and iced water and mix for 5 sec/speed 7 or until you have a soft dough. Turn out onto floured ThermoMat and form into a flat disc. Wrap and refrigerate for at least 30 minutes.
Pre-heat oven to 180°C.
Peel and slice apples. Toss gently with remaining spice mixture.
Divide pastry in half and line a pie plate. Fill with apples and roll remaining pastry to form upper crust. Pinch rim together to seal. Slice a cross in the pastry lid to allow steam to escape.
Bake for 45-50 minutes or until golden.
