Generally speaking, I don’t post recipes from Thermomix cookbooks…its much more fun to have the actual recipe book 🙂 However, this recipe is from the Fast and Easy Cooking cookbook (the UK version of our Everyday Cooking Cookbook) which most people in Australia wouldn’t have access to so I couldn’t resist sharing this one.
As you will see from the photograph, I made my biscuits bigger than the walnut size suggested but they still turned out beautifully. As there is chocolate left over, I made a few biscuits covered in the chocolate which the kids (obviously!) just loved.

Baci Di Dama
(Biscuits Sandwiched with Chocolate)
100 g almonds
100 g sugar
100 g soft butter
150 g flour
Pinch of salt
150 g dark chocolate, 70% cocoa solids, in pieces
Preheat the oven to 160˚C.
Grind the almonds and sugar for 15 seconds on Speed 10.
Add all the other ingredients except the chocolate and mix for 15 seconds or more on Speed 3 until well mixed. Tip out and form the mixture into small balls about the size of a walnut, placing them on baking parchment on a baking sheet.
Bake for about 15 to 20 minutes until just pale gold. Leave to cool on the paper on a rack.
Clean the TM bowl. Chop the chocolate for 10 seconds on Speed 10. Melt for 3 minutes at 50˚C on Speed 4. Cool a little and then spread on half the biscuits, topping each with a second biscuit to make a sandwich. Refrigerate to set.
