Yesterday I received an email from a friend sharing this recipe. It seemed such a quick and easy after school snack that I immediately converted her recipe to a Thermomix recipe and popped it in the oven…all within the space of about five minutes!! Thanks Susan for sharing another great recipe 🙂
Oaty Coconut Slice
110 g rolled oats
130 g plain flour
200 g shredded coconut
150 g raw sugar
125 g butter
2 tablespoons of honey
½ MC water
½ teaspoon bicarbonate of soda
Preheat the oven to 170˚C and grease a 25cm x 30cm tin.
Place butter, honey and water in TM bowl and melt for 4 minutes on Speed 3 at 60˚C. Stir in bicarbonate of soda for 5 seconds on Speed 4.
Place oats, flour, coconut and sugar in TM bowl and mix on Reverse for 5 seconds on Speed 4 or until combined.
Press mixture evenly into prepared pan and bake for approx 25 minutes. Cool in pan before cutting.
Keeps for two days, if it lasts that long!!
