Herb and Cheese Log
1 clove garlic
3 tbsp chives, chopped
3 tbsp basil, chopped
2 tbsp parsley, chopped
250g cream cheese
125g goat’s cheese or white Castello cheese
¼ to ½ tsp cracked black pepper
Place garlic, chives, basil and parsley into TM bowl and with dial set to closed lid position, press the Turbo button 3 times. Set aside 1/3 herb mixture.
Add cheeses, pepper and garlic to the TM bowl with the remaining herbs and beat for 10-15 seconds on Speed 6.
Turn out onto greaseproof paper. Roll into log shape and then roll entire log into the reserved herb mixture. Roll up in the greaseproof paper and refrigerate for 3-4 hours.
Vary this mix with different herbs and spices and add chilli, etc as you like.
Serve with crackers and crudités.
