180 g quiona, rinsed
200 g chicken breast, diced
280 g sweet potato, diced
280 g broccoli florets
700 g water
2 garlic cloves
Juice and zest of one orange
1 tbsp white wine vinegar
Fresh mint, shredded
Place garlic into mixing bowl and chop for 3 seconds on Speed 7. Scrape down sides of bowl.
Add zest, juice and vinegar and mix for 3-4 seconds on Speed 4.
Rinse quiona in steaming basket. Set aside.
Place vegetables in Varoma dish and chicken in Varoma tray. Set aside.
Place water in TM bowl. Insert steaming basket with quinoa. Set Varoma into position and cook for 16 minutes, Varoma temperature on Speed 4. Half way through cooking stir vegetables.
When cooked through, place into serving dish and stir dressing through pilaf. Sprinkle with mint.
Can be served warm or cold.
