1 medium sized avocado – peeled and stone removed
30 g sugar
800 g ice cubes
1 egg white (optional)
Place sugar in bowl and pulverize for 10 seconds on Speed 9.
Add avocado, ice (in two batches*) and egg white. Mix for 30 seconds on Speed 10 with the aid of the spatula until all ice has been emulsified. (If additional liquid is needed a dash of cream will ensure your sorbet is even creamier*)
