Thermomix Tomato Sauce (Paste)

I love our Thermomix Cooking Classes, I always end up learning something too!!  This recipe for Tomato Sauce (Paste) brings back such good memories as I remember well a customer saying that she makes her own Tomato Paste in the Thermomix and in turn we begged her for the recipe!  The recipe was put in one of June 2011 team newsletter to share with our customers and I then posted the newsletter on this blog for everyone to enjoy.  However I received a message from Theresa saying she couldn’t access this recipe so here it is again so it doesn’t get lost amongst the links!  I hope everyone enjoys but especially you Theresa!!!

TOMATO SAUCE (PASTE)

50 G EVOO (extra virgin olive oil)
2 cloves garlic
1 small onion
1 small carrot
I kilo tomatoes or l kg tinned tomatoes ( 3 x 400g cans)
30g sugar
1 tbspn TM stock concentrate
Salt and Pepper
A few basil leaves

TM31 METHOD

Add onion, garlic, and carrot to TM bowl. Chop 10 sec on speed 5. Add oil to bowl and sauté for 7 min, varoma temp, speed3/4.

Scrape sides of bowl. Chop further 10 sec on speed 5.

Add tomatoes and rest of ingredients and cook for 30 minutes on Varoma temp at speed 1.

(Place steamer basket on top instead of MC so that some of the liquid evaporates)

Should you wish to make it more concentrated, cook for a further 5 or 10 minutes.

NOTE: If using fresh tomatoes, make sure they are very ripe and red. Hull out the top and squeeze juice out with your hands. Then puree them on speed 6 or 7 until smooth.  Remove and reserve for later use.

This sauce can be used on its own or you can add grilled crispy bacon and mushrooms or sautés some peeled prawns, calamari and steamed mussels to it and simmer for 5-7 minutes and you have a delicious marina sauce.

    Hi Simone, wow my own reply, thank you for such a quick response, I made the tomato sauce (paste) it was amazing, my kitchen smelt like nona’s kitchen, thank you and your customer for the recipe.
    I have been reading your post for a while, I love it, easy to follow and read, the recipes are delicious, also lots of great hints and tips for the thermomix. Thank you again x Theresa

    This is so delicious !!! I have used it in a variety of ways already and will need to make more very soon it is so good and I don’t want to run out. I used it on Bruschetta with Bocconcini & Basil for twenty people and then on Chicken Schnitzels Parmigana and also in a Mushroom Sauce to pour over steak which gave the sauce an added depth. Thank you for this fab recipe X

    How long will it keep for?

    • Hi Tania, I’m not sure exactly but I would presume it would be like most sauces / pastes in that if it is stored correctly in a sterilised jar it will store for ages but once opened it may be best to use within 7 days as per usual. If anybody knows any further information please just let me know! 🙂

    This is my absolute go to recipe – absolutely love it! I use it for everything – pasta sauce, pizza sauce, spread on sandwiches and have started making some for a friend who loves it but doesn’t have a Thermomix – thank you so much for this recipe!
