Thermomix Rainbow Cookies

This is a recipe given to me by my neighbour and the recipe was given to her by her friend’s 12 year old daughter 🙂 Great one for the kids when you aren’t worried about being too healthy!!

Rainbow Cookies

250 g butter (softened)
150 g brown sugar
90 g caster sugar
3 teaspoons vanilla extract
2 eggs
1-2 tablespoons milk
430 g plain flour
1 teaspoon baking powder
200g packet of chocolate freckles

* Pre-heat oven to 180 degrees (160 degrees fan-forced) and line two large baking trays with baking paper

TM31 Method

* Insert butterfly and place butter, sugars and vanilla in Thermomix bowl and beat on Speed 4 for 1 minute (if you don’t have soft butter on you and are in a hurry like I always am, soften butter first by by beating on Speed 6 for until soft, approximately 6 seconds)

* Remove butterfly

* With blades running at Speed 4, insert eggs one at a time through lid and mix for 10 seconds each egg

* Place milk, flour and baking powder into mixture and combine all ingredients on Speed 4 for 5 seconds. Scrape down and repeat

* Roll level tablespoons of mixture into balls and place on prepared trays, 2 cm apart to allow for spreading

* Press freckle on top of each cookie

* Bake for 12-15 minutes and cool on tray for five minutes before moving to cooling rack

    I made these today and they are fantastic – thank you. Just one thing, as the batch made about 22 cookies – would some freeze OK or not??

    • Sorry Angela for the delay, I didn’t see your comment until now! Hopefully you have now either eaten all the cookies or frozen them 🙂 Yes I believe they would be fine to freeze though I think freezing the dough is the best option. So pleased you enjoyed them x

  2. Hello – I cooked these the other weekend and they turned out great! Had a hard time mixing in the flour in the thermomix so ended up mixing by hand. They looked exactly like your photo and everyone at work loved them! you can see a photo on my instagram page whatchloecooks
