Jan’s Thermomix Passionfruit Curd

Hello everyone,

I now its been a while between posts (again!)…unfortunately the blog often suffers amongst the busyness of life.   Luckily there are so many fantastic Thermomix blogs and Facebook pages out in the big wide web all providing lots of inspiration and amazing recipes.

Talking about amazing recipes, I have been lucky enough to have been sent another couple of recipes to share with you from Jan who you may remember from such wonderful recipes such as the homemade ricotta.  First up is Passionfruit Curd…which just happens to go fabulously with the Apple and Blueberry Brioche which is coming up next!!

Thermomix Passionfruit Curd

Passionfruit Curd


6 large eggs
120g butter
1 cup sugar
1 cup passionfruit pulp (approx 8 fruit depending on size)


Place all ingredients into mixing bowl, 15 min/80oC/Speed 3

It should coat the back of a spoon; it will thicken more as it cools.

Put into a sterilized jar and keep in the fridge.

    Sounds yummy, can’t wait for the brioche to go with it 😀. Any idea how long this will keep in the fridge?

    • Brioche recipe has just been posted! I would imagine this curd would keep as long as any other curd would keep for. I quick “google” found this information from the http://foodpreservation.about.com website:

      “Unless the jars are sealed by processing, fruit curds will only keep in the refrigerator for 1 to 2 weeks. For longer storage, process 1/4 or 1/2-pint jars of lemon curd in a boiling water bath for 15 minutes. Once processed, jars of lemon curd will keep in the refrigerator for 3 months until they are opened (after opening, they will only last 1 – 2 weeks). The surface of curd in sealed jars may darken slightly if kept longer than a month, but that is an esthetic concern, not a health hazard.

      Experienced canners may be raising an eyebrow in query: do you really need to refrigerate the sealed jars even though you’ve processed in a boiling water bath? Yes, with fruit curds, you do.

      Lemon curd can also be frozen for up to 1 year.”

    I plan to use passionfruit curd to fill a pavlova. Can I just use the left over egg yolks from making the pav, or does it require whole eggs
